Well honestly you can have kimchi without cabbage, and we did for much of the day, but you know what I mean.
How do you get this much cabbage? By haggling with random men in vans by the side of the Manhattan Bridge, of course!
After cutting a few slick deals we made off with 4 boxes of napa cabbage, which we coated with a bit of ice to keep it crisp overnight. The ice did a good job keeping the cabbage cool and our floor wet, and we only approved of one of those things.
