Thai chilies are incredibly, incredibly hot. The smaller the pepper, the hotter it is!

The red ones I've been getting from Sun Hung Lee have been bigger than usual the past few months, but I can't say I'm botanical enough to know what's going on. They also sell the green ones there. Don't tell anyone, but you can really substitute in either way to get a good accent color for your dish.

If you wear contacts and are responsible enough to not sleep in them, you're going to have a lot of fun taking them out after you cook Thai food.
