In Person: Homemade Hot Sauce

Laena is Founder and CEO of Anarchy in a Jar, a jam and mustard company based in Brooklyn. She's an entrepreneur, instructional designer, birth and business coach–empowering people through work, life, childbirth, and transformation. In her private practice, she coaches people who crave financial freedom and an integrated work/life/cycle.
Laena launched her startup, Anarchy in a Jar, in 2009. It has been featured in the New York Times, the Wall Street Journal, the Martha Stewart Show, New York Magazine, Food & Wine, and more. Laena's cookbook, Jam On: The Craft of Canning Fruit, was published with Penguin Random House in 2012. Her newest venture is Integrated Hustle, a firm that coaches and educates lean entrepreneurs.
Laena graduated magna cum laude from Mount Holyoke College, received an MS in Information Science from Pratt Institute, has trained as a birth coach and food scientist, and was awarded the United States Antarctica Service Medal by the Department of Defense for her work with the National Science Foundation.
When she’s not making it rain with mustard and startup nitty-gritty, you can find her dreaming about her next adventure and chasing her children around Brooklyn.
David Zheutlin enjoys teaching. He takes lots of notes. He finds many mundane moments funny, or at least muse-worthy, so life is grand. Though never good at following detailed directions, he gives pretty good ones. He noticed this back when he was in middle school, and then for seven glorious years taught middle school medieval history in Manhattan. (A slice of sage advice resonated: "If it's not fun for you, it's not fun for the students.") Today, he works with two organizations in Brooklyn -- The Post, and Brooklyn Youth Sports Club -- in hopes of enlivening classrooms across the country. He believes that successful students of the future will excel in enthusiasm, imagination, and creativity; he tries to direct teachers to think differently about content. Sometimes he is a writing coach; other times he is dropping off hot sauce samples on friends' stoops. In the era when there were sports, he played lots of basketball. Now, you can find him reading on the fire escape, turning windowsills into herb-and-vine jungles, and smiling on Zoom!
What condiment can you not live without? I confess: for me, it's hot sauce. I even carry a little bottle in my purse, for my on-the-go heat addiction. And it's amazing how fun and easy homemade hot sauce can be! I look forward to sharing my passion for preservation with you, as we make our own hot sauce together.
In this class you'll learn the simple steps of homemade hot sauce, from sourcing peppers and ingredients, cooking, and storing your batch. We'll also cover the tools and tricks of preservation and fermentation, such as safety and shelf-life, as well as various methods and canning history. You'll also get a recipe and tips as we make hot sauce together during class and a small bottle to take home.
You will walk away with the ability to:

* Ferment your own hot sauce at home
* Share your homemade jar of hot sauce with friends!
