Start your day off right with a serving (or two) of vegetables. We know how to throw a handful of spinach into our smoothies or add lettuce, tomato and avocado to our egg & cheese, but can you get creative with vegetables at Breakfast?

This class will teach you three vegetable-heavy breakfast dishes, some of which you can make ahead and all of which can be spun off and customized into a variety of different dishes throughout the year, so you can eat seasonally and not get bored. Students will also share their favorite breakfasts for including veggies.

Menu:

  • Assorted Smorrebrod

  • Sautéed Seasonal Vegetable Strata or Asparagus/Spinach Nests

  • Chili Maple Glazed Squash with Runny Eggs
