In his more droll moments he is a tragic sellout to higher ed as a professor of data journalism at Columbia University's journalism school.

Cool off from the summertime heat with a refreshing, raw Thai salad! Green papaya salad (som tam) is a delicious sweet-sour-spicy dish made with only a handful of ingredients - like palm sugar, lime juice, green beans, and green papaya.

As we prepare two versions of the dish, we'll introduce you to Thai cooking ingredients, discuss regional differences, and where to track it down at restaurants across the city. Haven't seen green papaya in the grocery store recently? Don't worry, we'll also experiment with carefully-chosen substitutions that you can even find at a neghborhood bodega!
