There’s so much more to rhubarb than pie. Join us for all things rhubarb. Learn a little more about this unique vegetable (yup, that’s right, it’s a vegetable) that is often prepared and enjoyed like fruit. Discover how it grows, its nutritional benefits and most importantly, how to cook it every which way that is decidedly not Strawberry Rhubarb Pie. We’ll discuss and practice both savory and sweet applications for rhubarb. I’ll share some tips for extending its life so that you can enjoy this delight year-round. Get yourself a big bundle of this stuff at the farmer’s market and get ready to cook with rhubarb.

In this class, you will make:

  • Shaved Rhubarb and Asparagus with Lemon Sherry Vinaigrette, Creme Fraiche and Farro

  • Gingery Rhubarb Chutney

  • Chickpea and Rhubarb Tagine

  • Basque Burnt Cheesecake with Orange Rhubarb Compote

This is a virtual hands-on class. There is some prep required for this class. You’ll receive a detailed ingredients, materials and prep list at least 1 week before class. No special tools or equipment required, but a spring form pan is highly recommended for the cheesecake.
