Make 2, Freeze 1: Italian Comfort Foods (Online)
Taught by Laura Scheck
Laura Scheck is the founder of Teaching Table, a culinary education platform that aims to inspire others to cook foods that are better for their bodies, their families, and their communities. Laura previously worked as a teacher and adult educator and was trained at the Natural Gourmet Institute, making her uniquely suited to share her passion for food in an educational way. Teaching Table provides public cooking demos and workshops, lessons targeted towards individual needs and special diets, private cooking classes & events for cooks of all ages and experience levels, as well as tips, techniques, and recipes via a blog and social media.
The days might be getting longer, but the number of hours we have is finite. Save yourself time in the kitchen by practicing meal preparation and storage strategies for big batch cooking. Make 2, Freeze 1 could be the most practical of all Teaching Table classes. You’ll make double batches of everyday favorites so that you can eat one for dinner and freeze another for a rainy day, a neighbor in need of a comforting meal, or the potluck you didn’t know was coming up.
We have tested variations so that both of these dishes can be made vegetarian or 100% plant-based. Everyone will be coming back for seconds. And when they ask for the same meal the very next week, you’ll have it already prepared in your freezer!
Menu:
-
Orechiette or Rigatoni with Spicy Sausage (pork or turkey or vegan) and Broccoli Rabe
-
Tuscan White Bean Soup with Garlic and Rosemary
Both recipes for this class can be 100% plant-based. There is minimal prep and a short list of overlapping ingredients required for this class.
Italian Comfort Foods is part of the Make 2, Freeze 1 class series that teaches strategies for batch meal preparation and storage. Look out for more classes in this series to be posted soon.
