Most Americans are familiar with the post-Thanksgiving mash up of sliced turkey, potatoes, and cranberry sauce stuffed between two slices of gravy soaked bread. But, have you explored other more creative ways to re-purpose your Thanksgiving leftovers? This virtual hands-on class will have you digging your Thanksgiving leftovers out of the fridge and transforming them into dishes you can enjoy all week or even freeze for a snowy day. We’ll brainstorm countless dishes using the leftovers and ingredients you have on hand and you might prepare the following classics:

  • Smoky Carrot Soup with Chili Oil

  • Turkey Pot Pie

  • Potato Pancakes with Runny Eggs

  • Stuffin’ Muffins

  • Pumpkin Bread Pudding

Chef Laura will walk you through ideal flavor combinations, appropriate cooking techniques, and substitutions to use what you have to make what you want. You’ll receive access to all recipes from super simple to complex.

What you need:

  • your Thanksgiving leftovers including but not limited to: turkey, gravy, roasted vegetables, charcuterie and crudité, mashed potatoes, stuffing, cranberry sauce

  • cooking oil like olive or canola

  • salt

  • pepper

  • spices like cumin, paprika, harissa, red pepper flakes

  • stock or broth

  • all purpose flour

  • unsalted butter

  • eggs

  • pie plate, optional

  • rolling pin or glass bottle

  • pots and sauté pans

  • small baking dishes or muffin tins

  • cutting board

  • knife
