Laura previously worked as a teacher and adult educator and was trained at the Natural Gourmet Institute, making her uniquely suited to share her passion for food in an educational way. Got eggplant? Go beyond eggplant parmesan in this 2-part class! Learn all about eggplants and how to prepare them. Differentiate between varieties of this delicious vegetable, note its nutritional benefits and most importantly, practice how to maximize its flavor and texture in every dish you make.

In each session of Cooking with Eggplant, we will discuss and prepare 3-4 eggplant dishes. Brainstorm additional eggplant dishes with your classmates and get a few bonus recipes as well. Get yourself a few big purple bulbs at the farmer’s market and get ready to do your best Cooking with Eggplant.

 

Cooking with Eggplant 1: Mediterranean

  • Rustic Unbreaded Eggplant Arrabbiata (tomato sauce, chili flakes, ricotta)

  • Whole Roasted Eggplant with Anchovy and Oregano

  • Eggplant Meatballs in Spicy Basil Marinara or

  • Saksuka (Turkish stew of Lightly Fried Eggplant, Bell Peppers, and Tomatoes)

This is a virtual hands-on class. There is some prep required for this class. You’ll receive a detailed list of ingredients, materials, and prep instructions at least 1 week before class. Weigh in on the menu!
