Laura Scheck is the founder of Teaching Table, a culinary education platform that aims to inspire others to cook foods that are better for their bodies, their families, and their communities. Laura previously worked as a teacher and adult educator and was trained at the Natural Gourmet Institute, making her uniquely suited to share her passion for food in an educational way. Advanced Knife Skills class is for the home cook who wants to improve their accuracy and detail. In this class, you will learn and practice more intricate cuts, such as:

  • julienne

  • brunoise/fine brunoise

  • bias

  • supréme

  • chiffonade

  • rondelles

  • parisiennes

Suggested Menu (to use up what you cut):

  • Supremed Citrus and Herb Salad with Citrus Vinaigrette

  • Chickpea Noodle Soup

No prep. You might want to turn your cuts into a quick dinner. Recipes will be provided. Minimal class time will be devoted to the recipes/meal prep and the focus will be on the knife skills. No special ingredients or tools required.  

What you need:

  • cutting board

  • knife

  • bench scraper, recommended

  • peeler

  • apples

  • herbs

  • citrus fruit

  • 1-2 pounds seasonal fruit

  • additional ingredients for salad, optional (recipe will be provided)

  • ingredients for charoset, optional (recipe will be provided)

We will define these terms and discuss the best applications for fancy cuts. With your newly honed advanced techniques, you will impress your dining companions and elevate both presentation and texture, while becoming more efficient. 

Prerequisite: Knife Skills for Beginners is recommended, but not required. Participants should be able to handle a knife properly, and have extensive daily experience with consistent and even basic cuts, like chopping, slicing and dicing.
