Ever worried about what you will eat if you find yourself outsourced to a hot tropical country such as India? Are you a vegetarian who is tired of tofu and fake meat? Or, quite simply, have you been wondering about what its like to be vegetarian in other parts of the world?

This class will introduce you to a whole new way of eating vegetarian. The food we will talk about (and cook, and eat!) can't be found on a restaurant menu, but is available in plenty on the streets and homes of an Indian city.

Together we will make a trio of chutneys - cilantro, tamarind, and garlic - and then use them as the base for different appetizers and entrees such as vegetable fritters, chutney sandwiches, yogurt 'chaats', chickpea curries, beverages, and more.

You will be introduced to a few trusty condiments that will liven up just about anything you eat, we will discuss the basics of this vegetarian diet, and you will learn much about an entirely novel vegetarian cuisine and the place it comes from.

Finally, you will come away with more than a few ideas for cooking in the upcoming summer, from a country that lives through an eternal summer.
