Emilie Friedman realized she wanted to be a chef while traveling through organic farms in Spain, Italy and France. There she learned basic growing practices, specifically related to heirloom varieties of vegetables. When she returned to NY, she studied at The French Culinary Institute, concentrating in local, vegetable driven cuisine. She currently works as a private chef, and especially enjoys teaching private classes on how to use local vegetables, and create small gardens in your own urban space.

Think you need all kinds of special equipment to make your own pasta? Not at all! In this class, you will learn how to make your own ravioli--making both the pasta and ricotta filling by hand. We'll also make a tomato sauce to enjoy with the pasta after class. 

Besides being an impressive skill to show off to all your friends, homemade pasta freezes well, meaning dinner's always at hand. It also makes an awesomely interesting and heartfelt gift for the holidays, way better than anything you could pick up at the store.
